It is cooked slowly and in a lower temperature compared to the classic Neapolitan pizza (10-15mins). Ours is particularly light, dough fermentation is long, and is cut and served in wedges. If you’re familiar with it, you can choose it with your eyes closed, and if you aren’t, you’ll surely fall in love with it!

Not to be confused with the scrocchiarella pizza, our pizza in the pan has uniform size and is thicker. The base is thin and crispy, the upper part has more or less regular bubbly crusts and the central part is characterized by airy crumbs. Because of the water content in the dough, pan pizza is crunchy and melts in your mouth at the same time!
